今天请出的大厨名叫Cyril Rouquet,也是业界牛人,去北京参加过国际厨王争霸赛:

今天Cyril Rouquet先森将教大家做一道法式橙子鸭胸肉,这是原材料之一鸭胸肉:

先切两个橙子:

餐馆老板Rodolphe卖力地用机器手工挤橙汁,最简单有效滴方法:

将挤出来的橙汁放到四个鸡蛋里去:

再在鸡蛋橙汁里放入100克白糖和100克黄油:

不断加热搅拌,直至完全融合均匀:

混合物冷却凝固后,橙子浆便做好了,装到塑料挤袋里去:
